2 cups cooked and drained pasta
¾ cup sliced grape tomatoes
1 red onion chopped
1 large cucumber sliced
For the dressing
¼ cup apple cider vinegar or lemon juice
1 tablespoon olive oil (optional)
¼ cup fresh basil leaves
1 tablespoon whole mustard (without egg yolk)
⅓ cup soaked cashews or cashew cream
½ cup water
1. Cook your pasta following the instructions on its package. Drain the water, and run them under cold water to cool them. Add some olive oil and salt, then set aside.
2. Blend the cashews in a blender ,add Dijon mustard, roasted garlic, apple cider vinegar, and salt. Mix to combine well.
3.Chop cucumber and the onions to your desired shapes and set them aside.
4 Mix the pasta, chopped cucumbers, Onions, and the dressing in a large salad bowl.Toss to combine well.
5. Serve and enjoy.
