Description

Easy No-bake Vegan Pumpkin Energy Balls are simple to make. Just add all the ingredients except the chocolate chips in a blender and Blend. Add the chocolate chips and combine well. Freeze for 30 minutes and serve.


Ingredients

Scale

½ cup whole oats or sugar-free granola 

⅔ cup pumpkin puree

1 teaspoon all spices or pumpkin pie spice 

1 teaspoon ground cinnamon 

¼ cup shredded coconut flakes or coconut flour

Pinch of salt 

1 teaspoon vanilla extract

1012 pitted dates soaked in warm water for about 20 minutes to soften

1 tablespoon ground flax seeds

3/4 cup chocolate chips


Instructions

1.Remove dates from the soaking water and place them in a food processor. Add oats or granola, coconut flakes, pumpkin purée, ground cinnamon, ground flaxseed, and vanilla extract. Blend all these ingredients until they are well combined.

2.Transfer to a mixing bowl, add chocolate chips, and mix well.

3.Roll the mixture into sizable balls. This is about two tablespoonfuls or cookie scoop per ball.

4.Place the balls in a clean airtight container lined with parchment paper and store in the fridge for about 30 minutes before serving.

Notes

You can store these balls for up to one week in the refrigerator or in the freezer for two months.
