Description

An easy vegan Banana bread that requires only six ingredients. Blend those overripe bananas and use them to make this delicious bread.


Ingredients

Scale

3 Large/ 6 Small Very Ripe Bananas 

1/3 cup of oil with no  flavor, like sunflower oil or grapeseed oil

½ teaspoon stevia or 4 TBSP vegan maple syrup 

1 1/2 all-purpose flour

3 tsp baking powder

1tsp vanilla extract 

3tsp cinnamon

1 tsp vegan butter/ oil spray

*optional* Chopped almonds, walnuts/dried fruit, dark chocolate chips. 


Instructions

Step One

Preheat your oven to 180 Degree centigrades or 350 degrees Fahrenheit and grease your baking tin with some vegan/dairy-free butter or oil spray. 

Step Two

Place your peeled bananas, vanilla extract, oil, and stevia/ maple syrup in the blender and blend until smooth with no lumps. You can also mash your bananas with a fork and mix the oil and sweetener. 

Step Three

In another separate medium bowl, mix your flour, cinnamon, baking powder, and any extras until well combined. Ensure any baking powder lumps are adequately broken down and mixed in. 

Step Four

Gently fold the wet contents into the dry ingredients and mix until the ingredients are thoroughly combined. You don’t have to beat the mixture. 

Step Five 

Transfer the mixture into your greased tin and bake for 40 minutes. If the bread goes brown by the middle of the bake, you can cover the baking tin with foil to prevent it from browning further. The bread is cooked when a skewer can be pulled out clean. 

Step Six

Allow to cool before serving if you can resist!
