- The best Vegan Chickpea Curry.An excellent dish for a healthy quick dinner or lunch. Serve it over rice, mashed potato, or quinoa.
Ingredients
1 Can /cup cooked chickpea
2 Tablespoon olive oil
1 medium chopped onion
4 Tablespoon tomato paste
½ teaspoon curry powder
2 cloves garlic minced
1 large carrot chopped
1/2 teaspoon smoked paprika
1/4 teaspoon turmeric powder
½ cup coconut cream
1/4 cup hot water
Chopped cilantro for garnishing. (optional)
Instructions
1. Heat olive oil in a medium saucepan; add onions and cook for about two minutes or until soft.Add garlic and cook for another 1-2 minutes, then add chopped carrots and cook for a minute.
3. Add tomato paste and the spices ,stir to mix well.Add the cooked chickpeas combine well, and let suite’ for 2-3 minutes.
4. Pour in coconut cream and combine well, occasionally stirring to allow the chickpea to absorb the flavor.
5. Add a little water to make a pourable paste if the consistency is too thick.Cook for the shortest time possible.
6. Serve in a clean soup bowl. Garnish with freshly chopped herbs such as parsley and serve over rice, mashed potatoes, or quinoa.
