Description

A creamy delicious vegan mushroom goulash that takes less than 30 minutes to make. It is very nutritious and filling.


Ingredients

Scale

2cups chopped white 

mushrooms

2tbsp olive oil

¼ cup tomato puree

cloves of garlic minced

1 medium onion chopped

½ tsp smoked paprika

¼ tsp turmeric powder

¼ cup cashew/ coconut cream

Pinch of salt


Instructions

1.In a medium cooking pot, heat olive oil , add the onions and garlic.  Cook on medium-high heat for 2-3 minutes or until soft,.

2.Add the chopped mushrooms and mix with the onions. Cover with a lid and sauté until the water drains off.

3.Add the tomato paste, spices, and salt. Cook for about 5 minutes, then add coconut cream. Cook on low heat uncovered for 4-5 minutes.

4.Remove from heat; serve warm with pasta, quinoa, mashed potatoes, or rice.
