Ingredients
1 cup grilled, Fresh or lightly steamed, and cooled Yellow corn.
1 cup cooked and drained black beans
¾ Cup red bell Peppers chopped
2 large avocados pitted and chopped
1 large Red onion chopped
For the dressing
2 Tablespoon olive oil
1/4 cup lime Juice
2 tablespoon Honey or maple syrup
1/2 Teaspoon salt
Instructions
1.In In a large bowl mix Corn, Black Beans, Red bell pepper, Cilantro (optional), and red onions.
2.In another separate bowl whisk together the olive oil, lime juice, honey, and salt for the dressing.
3. Drizzle the salad dressing on the salad and toss to combine well.
4. Lastly, add the chopped ripe avocado to the mixture and combine well. Do not overmix to keep the avocados whole.
5.Chill in the fridge for 5-10 minutes and serve cold.
