Quinoa salad simple recipe.
- 1 cup uncooked quinoa
- 1 cup cooked black beans
- 2 cups of water
- 1 Tbsp olive oil.
- 1–2 medium chopped carrots
- 1/2 cup chopped yellow bell pepper
- 1/2 cup chopped red bell pepper
- 1 cup chopped cilantro divide
- ½ cup lemon juice
- ½ cup orange juice
- 1/4 cup pineapple Juice
- 1/4 cup honey or maple syrup (optional)
1.)For the quinoa.
Place the washed quinoa in two cups of water in a large saucepan. Add olive oil and bring to boil on medium-high heat, then reduce the heat to low. The cooking should take 10- 15 minutes. Cook until ready and set aside to cool.
2.) For the dressing
In a medium bowl, add orange juice, pineapple juice, onion powder, and salt and whisk well to mix well.
In a large bowl, add the cooked quinoa, black beans, chopped red and yellow bell peppers, carrots, and cilantro. Mix well to combine all the ingredients well
4.) Drizzle the dressing on the salad and combine well. Chill for about 10 minutes to set.
5. Serve as desired.
