Ingredients
1 ⅔ cup whole wheat flour
1 cup unsweetened almond milk (Unsweetened plant milk alternative or unsweetened orange juice)
¼ cup maple syrup or any sugar-free sweetener)
1 tablespoon baking powder
2 teaspoon avocado/grape seed oil (any healthy oil option for spraying the pan)
¼ teaspoon salt
1 Tablespoon apple cider vinegar
1 teaspoon vanilla extract
1/2 cup Fruit toppings
Instructions
1. In a large bowl, combine the milk, apple cider vinegar, maple syrup, and oil, mix and set aside.
2. In another bowl, add all of the dry ingredients – whole wheat flour, baking powder, and salt. Mix to combine well.
4. Pour the wet ingredients into the dry ingredients. Add vanilla extract and combine well to make a battery spread. Do not make it too runny. Let the batter mixture sit for 2-3 minutes to activate the ingredient.
5. Heat your pan over medium-low heat and lightly oil it or spray with a non-stick oil spray. Scoop the batter mixture into the hot pan. The portion should be at least ¼ to ⅓ cup portions. Let the pancakes cook for about 2-3 minutes or until the butter begins to bubble.
6 ) Flip to the opposite side and press the pancake down to ensure the middle gets cooked well.
6. When cooked and lightly brown, remove from heat and cook the rest until all the batter is used.
7. Top the pancakes with your favorite fruits, add some syrup and enjoy.
